Only three tunes were planned in advance. George requested "Our Love Is Here To Stay" since he liked the arrangement that Jerry and Herb did on a previous album, "As Long As There's Music." They also discussed the possibility of doing Clare Fischer's tune "Morning." Bill Becker suggested "One Morning in May" which turned out well enough to be number one of the line up. The remaining tunes were last minute decisions and with the exception of "Quintessence" and "Once In A While," we chose to stay in an up tempo mood. During the recording of the song "Quintessence", the meaning of the word came into question. The definition given in the Webster Dictionary follows: "the purest and most concentrated form; the most perfect or rarest distillation or extract; the most perfect example of something," They thought it was the right title for the album.
